You will want to prepare this traditional and delicious dish clean, keto, low carb and high fat. It is delicous and healthy. You can also make this vegetarian by eliminating the shrimp. You can add another veggie like zucchini or chopped broccoli. For the gravy use a good homemade veggie stock.

Ingredients
For the Egg Foo Young
- 8 pastured eggs I used pastured eggs, non washed no corn and soy
- 3 shitaki mushrooms sliced into thin strips
- 2 heaping cups fresh bean sprouts
- 1 lb wild Key West shrimp peeled, deveined and roughly chopped. Salt and pepper to marinate
- 3 green onions chopped
- 1/4 tsp white pepper
- 4 -8 tbsp avocado or coconut oil
For the Gravy
- 1 cup good homemade chicken bone broth
- 1 tbsp tamari (soy sauce)
- 4 tsp arrowroot or organic corn starch
- 2 tsp good sesame oil

Instructions
- In a small bowl, mix all the gravy ingredients and simmer for 5 minutes over slow fire until well thickened
- whisk all the eggs until well blended. Add mushroom, green onion, white pepper and salt.
- Gently stir in the shrimp and then bean sprouts.
- Heat the oil in a fry pan on medium heat, (I used a large fry pan and cooked all 4 at the same time in the same pan). Pour in 1/4 of the mixture and fry for 4-5 minutes. Turn over and fry the other side for 2-3 minutes and then transfer out. Repeat to finish the remaining portions. Drizzle with gravy and serve.
