Ingredients
- 1 to 2 heads frisee washed and largely torn for basic salad
- 2 to 4 pears cored and sliced
- 1 tbsp fresh lemon juice
- 6 slices pastured thick cut bacon
- 2 tbsp cider vinegar
- 3 tbsp wine vinegar
- 1 - 2 tsp dijon mustard
- 2 tbsp shallot minced
- 1 to 2 tbsp sweetener I use xylitol or honey

Instructions
- Fry up the bacon until crisp. Remove from heat and set aside to cool. allow the bacon grease to cool a little in the pan.
- While bacon is cooking , prepare your frisee on a large platter and set aside.
- Place the lemon juice in a medium bowl. Core and quarter pears. Then slice each quarter into three slices and add them to the lemon juice and toss. Arrange them on the frisee.
- Chop the bacon into lardons and sprinkle over the pears and frisee.
- Add the bacon grease to the bowl the pears were in. Add the rest of the ingredients to taste and whisk well to make a great dressing.
- Salt and pepper the salad and pour the dressing over and serve.
