Ingredients
- 1/2 cup no sugar peanut butter
- 4 tbsp grass fed butter(divided) I used Kerrygold
- 1/2 cup good full fat coconut milk
- 3/4 cup almond flour
- 1 tsp good vanilla extract
- 3/4 cup zylitol
- 2 tsp baking pwder
- 1/2 tsp kosher salt
- 6 eggs slightly beaten
- 2 oz Lilly's Chocoloate Chips

Instructions
- Preheat oven to 350
- Butter a standard loaf pan. Place parchment in the buttered pan letting it hang about 3 inches over the long sides. Butter the parchment and set aside.
- Melt 3 tbsp of the butter with the peanut butter (i used a microwave).
- Stir in the remaining ingredients except for the eggs
- Tase the batter to see if it is sweet enough...adjust if needed.
- Pour in the eggs and stir well. Pour into prepared pan.
- Pour into parchment lined loaf pan.
- Bake for 45 minutes until browned and toothpick comes out clean.
Recipe Notes
I served this with apple butter. Homemade applesauce or a good sugar free jam.
