This is a rich and super tart and delicious healthy Keto dessert.  Your family will not be able to resist the buttery deliciousness.  I say lazy days “Sort Of” as it takes time but is super easy.

Lazy Days (Sort of) Meyer Lemon Keto Tart
I used my "BEST PALEO PIE CRUST" for this tart. Simply place it in a removable bottom fluted tart pan.

Instructions
  1. After you remove the cold pastry dough from the fridge, you will roll it out according to recipe directions but keeping it about 1/4 inch thick. Then turn it into the removable bottom tart pan and press the sides up to cover completely. Dot with fork and place in the freezer for one hour.
  2. Preheat oven to 350 and place the frozen pie dough in the oven for 15 minutes.
  3. While the pie dough is cooking, place all the ingredients for the filling in a food processor and process until smooth.
  4. Pour into the prebaked pie shell and bake for 35 to 40 minutes until set and a little golden on the edges. Cool to room temperature and serve. You can serve with berries in the side but so good as it is.
  5. Store leftover in the fridge and heat slices for 30 seconds in microwave to serve.
