You will need at 10 inch springform pan for this recipe. I used organic non GMO strawberry gelatin.

Ingredients
Crust
- 1 cup Raw sunflower Seeds
- 1 cup Unsweetened shredded coconut
- 1/4 cup softened grass fed butter
- 2 tbs birch xylitol
- 1/4 tsp Celtic Kosher Sea Salt
Filling and Second Layer
- 1/4 cup birch xylitol
- 1 tbs organic non gmo strawberry gelatin
- 4 tbs water
- 4 oz organic strawberries
- 8 oz grass fed cream cheese softened (very least organic)
- 1 tbs fresh lemon juice
- 1/2 cup raw grass fed heavy cream
3rd Layer
- 8 oz fresh organic strawberries sliced
- 2 tbs xylitol
4th Layer
- 2 cups raw grass fed heavy cream
- 1/2 cup xylitol ground fine in spice grinder or food processor
- 1 tsp good vanilla extract I make my own (ask me how)

Instructions
For the crust
- Add sunflower seeds to the food processor and pulse 8 to 10 times to get a rough grind. Add the other ingredients and grid until small. Press crust into the bottom of a 10 inch springform pan. Set aside.
For the 2nd Layer
- In a small saucepan place the gelatin and the water. Stir over medium heat for a few minutes until dissolved. Set aside.
- Add xylitol, strawberries, lemon juice and softened cream cheese to the food processor and blend until smooth.
- Pour this mixture into the base of stand mixer. Add cream and blend until fairly thick. Add gelatin and blend again for 30 seconds.
- Pour this mixture over the prepared crust.
3rd Layer
- Place sliced strawberries in a bowl and mix with xylitol. Place sliced berries in a layer over the cream cheese mixture.
4th layer
- Add the cream to the base of a stand mixer and beat on high until stiff peaks form. Add xylitol and vanilla and mix 30 seconds more. spread this mixture over the strawberries.
- Decorate the top with a few strawberries.
- Cook in the refrigerator for a minimum of 4 hours to overnight
- remove from springform pan, slice and enjoy.
Recipe Notes
Please note that cream cheese needs to be softened for smooth and creamy consistency. While this dessert is easy to make...what makes it so delicious is the high quality ingredients. Raw grass fed cream, cream cheese and organic strawberries. Since it is a non bake dessert this is what makes the taste.
