This tart can be made with any kind of cheese. I once had a friend who came to dinner and brought me a big beautiful ball of 5 pounds of smoked edam. I had to figure out something to do with it and came up with this recipe. It satisfies a pizza crave too. I have made this recipe many, many times, and it is always a big hit.

Ingredients
- 1 Pie Crust See link to pie crust recipe
- 2 tsp. Jarred Garlic Do not use fresh garlic for this recipe, as it is too strong
- 1 medium Zucchini Slice into thin rounds (I use a mandolin)
- 3/4 cup Smoked Gouda Grated (can sub any cheese you like)
- 2 Roma Tomatoes Slice into thin rounds
- 1 Tbs. fresh basil Roughly chopped
- salt & pepper To Taste

Instructions
- Preheat oven to 375
- Rub garlic onto tart crust
- Gently lay zucchini slices in a circular pattern to cover bottom of crust.
- Place grated cheese over top of zucchini
- Place tomatoes in a circular pattern over cheese.
- Sprinkle with fresh basil, and salt and pepper to taste.
- Bake for about 35 minutes until crust is golden and cheese is melted.
- Slice and Enjoy!
