Ingredients
- 1 bunch Tuscan (Lacinato) Kale cleaned, stems removes and leaves broken into 2 inch pieces
- 2 to 3 Roma Tomatoes chopped into bite sized pieces
- 1/4 red onion sliced thin
- 1 Haas avocado peeled, cored and sliced into bite sized pieces
- 1/4 cup good virgin olive oil I use California Ranch
- 1 tsp course kosher sea salt
- 1 tbsp fresh squeezed lemon juice
- 1 tsp raw honey

Instructions
- Place prepared kale in a large bowl. Add olive oil and salt and massage in your fingers for about 5 minutes or so until tender and wilted.
- Once wilted add the additional ingredients and stir until well mixed
- Adjust taste with salt, pepper and sweetner, transfer into a serving dish and SERVE!
