If your tired of the same old salads, try this for something different. So healthy and easy to make and delicious. This is one of our families favorite salads. The deep and rich flavors along with the crunchy toasted pine nuts are simply delectable.
Double for 2 bunches of kale.

Ingredients
- 1 bunch kale green curly, Tuscan or red is fine
- 2 tbsp pine nuts
- 2 tbsp fresh squeezed lemon juice
- 3 tbsp good extra virgin oilive oil
- 2 tbsp grated parmesan

Instructions
- Place the pine nuts in a small fry pan and toast for a few minutes
- Clean, stem and lightly tear the kale. Add to the food processor and pules until small pieces form. Place in a bowl.
- Add the lemon juice and oil and toss until well combined.
- add the cheese and mix
- add the pine nuts
- Add salt and pepper to taste and serve.
