
Ingredients:
1 cup Snow Peas (I like them raw but you can blanch for 30 seconds to 1 minute)
1 /2 Cup Chopped Scallions
2 tbsp sesame oil
2 tbsp soy sauce
1 tbsp sweetener of choice
3 tbsp roasted and salted pistachios crumbled
3 tbsp chopped basil (Thai basil is best – but any basil will do)
Directions:
Place snow peas and scallions in a bowl and set aside
Add sesame oil, soy sauce, and sweetener of choice in a small bowl and mix well
Pour the sauce over the peas an scallions and stir until covered well.
Mix the pistachios and basil and sprinkle over the peas and serve.
