
ROASTED RED CABBAGE AND PORK
This is a delicious and easy meal and keto too!
INGREDIENTS:
1 – 2 to 3 lb pork loin or 2 pork tenderloins
1 to 2 heads of red cabbage sliced
1 large onion sliced
2 cloves garlic minced
1 large bay leaf
2 cups tomato juice or V8 (organic and sugar free)
½ cup (more to taste) apple cider vinegar
¼ to to 2/3 cups sweetener of choice (I used Xylitol)
Salt and pepper to taste
DIRECTIONS:
Start with a large roasting pan. Rub the poke roast with salt and pepper. Add a little olive oil to the pan and brown the pork on all sides. Remove from the pan and set aside.
In the same pan add the tomato juice, the vinegar and the sweetener and cook on medium until meshed and sweeten er is dissolved.
Add the cabbage, onion, garlic and bay leaf and stir…place the pork roast on top and nestle into the cabbage and sauce.
Cover and cook on medium to low for about (30 minutes for tenderloins) ( if using a tough cut of pork you my need to cook up to1 ½ hours. Until tender)
