When you make your own mayonnaise, it’s fresher and more flavorful than anything you can buy at the store. Plus, you control ingredients and their quality, and can season it to your liking! You’ll need an immersion blender for this recipe.

Instructions
  1. Separate the eggs and place the yolks in a wide-mouth jar.
  2. Add the lemon juice, vinegar, mustard and salt.
  3. Whisk together, very gently by hand.
  4. Slowly pour the oil into the jar. It should float on top of the egg mixture.
  5. Place your immersion blender all the way into the jar and start blending. You will see mayo being produced.
  6. Slowly lift the immersion blender until the entire jar is filled with mayonnaise This will take a couple of minutes.
  7. Refrigerate and enjoy!
Recipe Notes

If you want to make flavored mayonnaise, combine seasonings after the last step using a soft spatula and blending gently.

If your mayonnaise doesn't work the first time, don't throw it away! Toss a couple more egg yolks, lemon juice and vinegar into another jar and pour the liquid from the first attempt slowly into the new jar, just like you did with the oil the first time. Then, repeat the blending step.
