This method of making balsamic glaze takes a bit of time, but it’s worth it for the great taste. Try it as a salad dressing with a drizzle of olive oil, or as a garnish for fish.

Ingredients
- 2 cups balsamic vinegar
- 1 cup homemade ketchup
- 1 cup xylitol
- 1/4 cup tamari (soy sauce)
- 2 cloves garlic
- 1 inch ginger (whole)
- 1 tbsp arrowroot powder

Instructions
- Combine all ingredients in a sauce pan.
- Reduce on very low heat until thick and sweet (about 15 minutes).
- Remove garlic and ginger.
- Allow to cool and place in a tall narrow jar or squeeze bottle.
