Laura’s Celeriac Salad
A note from Laura This is delicious ! A longer marinade time would probably be even better (I only waited an hour cause I was hungry.) Maybe an apple cider or rice vinegar marinade? You can also add grapes for a sweet touch

Ingredients
1
medium to large celeriac
peeled and thinly sliced
1
lemon
juiced
sea salt
to taste
1
clove
garlic
minced
1-2
tblsp
good olive oil

cups
assorted greens
lettuce – frisee
1/4
cup
chopped walnuts or pecans
chopped
1-2
heirloom carrots
sliced thin
Instructions
rinse peel and slice celerIac. Place in a bowl with lemon juice, olive oil, garlic and sea salt. Marinade for 2 hours to overnight.
Rinse and tear lettuce greens and place on a platter.
Top with carrots and celeriac in marinade
Top with chopped walnuts
