This is a rich and super tart and delicious healthy Keto dessert. Your family will not be able to resist the buttery deliciousness. I say lazy days “Sort Of” as it takes time but is super easy.

- 1 recipe Pie Crust I used my "best Paleo Pie Crust
FOR THE FILLING
- 1 large Meyer lemon Mine were small so I used 1 1/2. Cut in half and then each half into quarters. Gently remove seeds.
- 1 1/2 cup xylitol Placed in a spice grinder to make superfine
- 1 stick unsalted grass fed butter room temperature
- 1 tsp good vanilla extract
- 4 pastured eggs room temperature

Instructions
- After you remove the cold pastry dough from the fridge, you will roll it out according to recipe directions but keeping it about 1/4 inch thick. Then turn it into the removable bottom tart pan and press the sides up to cover completely. Dot with fork and place in the freezer for one hour.
- Preheat oven to 350 and place the frozen pie dough in the oven for 15 minutes.
- While the pie dough is cooking, place all the ingredients for the filling in a food processor and process until smooth.
- Pour into the prebaked pie shell and bake for 35 to 40 minutes until set and a little golden on the edges. Cool to room temperature and serve. You can serve with berries in the side but so good as it is.
- Store leftover in the fridge and heat slices for 30 seconds in microwave to serve.
