INGREDIENTS:

For the Salad

1 carrot, julienned
2 cups shredded red cabbage
1 cucumber, thinly sliced
1/2 cup bell pepper, julienned
1/4 cup red onion, thinly sliced
1/4 cup chopped fresh cilantro
1/4 cup roasted peanuts, chopped
1 tbsp sesame seeds (optional)

For the Dressing

2 tbsp soy sauce
3 tbsp peanut butter (smooth or crunchy)
1 tbsp rice vinegar
1 tbsp honey or maple syrup
1 tbsp sesame oil
1 tsp grated ginger
1/2 tsp garlic, minced
1-2 tbsp water (to adjust the consistency)

DIRECTIONS:


Prepare the vegetables: Wash and slice all the vegetables as needed. Place the shredded
cabbage, carrot, cucumber, bell pepper, red onion, and cilantro in a large salad bowl.
